Not Setting Goals - saying you want to get as many leads as you can is NOT a goal. You have to have goals or you will never find out if your show was a success or not!
Not Training your staff How to Work a Show - many companies train their people on their products, and services, what promo items they're giving away, and other things. But the difference maker is training them HOW to work a show by engaging with attendees!

I see at nearly every show people that start dismantling their booths before the show ends. Some by a few hours!
I get it - sometimes the attendee traffic is pretty much non-existent near the last hours of the show...especially if it's a multi-day show.
However, not only can you miss out on significant opportunities for those attendees who may still be walking the show, it's also a very bad look to the show organizers. Don't put your company reputation on the line just to try to get out the door an hour earlier.
You invested to be at the show - take full advantage of every minute!
